There are so many temptations out there, “junk” food being one of them. You go into a grocery store and probably 80% of the aisles are filled with processed foods. Most people don’t even know what is in most of the food they eat. Let’s start cutting that stuff out of our diets and add more fruits, veggies, fish, etc. Here is just one snap shot of some of the many fruits and veggies I bought for this week. Aren’t they just so colorful?!
I already eat pretty healthy, though I do snack on the occasional bag of potato chips or candy bar, for the most part I stick to good decisions food wise. To keep things a little healthier my husband and I have decided we need to cut out the processed foods, or at least as much as we can with an on the go kind of life.
To get things started here is a little snack you can munch on during a movie or if your having a sudden craving for a salty chip.
All you need is:
1 Bunch of kale
Olive oil
Sea salt
Vinegar (optional)
Vegetable oil
Start by cutting the kale leaves off of the stems.
Once you have cut all the kale leaves you want, begin rinsing thoroughly
A salad spinner would be ideal to dry the leaves but I used paper towels. Dry them thoroughly and then put them all in a bowl.
Now add olive oil. I added about 2 tablespoons. Toss with your hands massaging the oil onto the leaves until there is a shiny coat on each one.
Next add the sea salt. Not too much, I added about 1 teaspoon or less.
Now lay them out on a greased cookie sheet or a piece of foil. Make sure the edges aren’t over lapping.
Now bake them for 12-15 min. on 350 degrees and here is the finished product!
I did one batch with vinegar and one without. Both delicious!

yum…do you mix the vinegar in when you do the olive oil?
Well I took about half of them out of the bowl before adding vinegar. That way I would have some with and some without.
