It’s that time of year! Perfect for delicious pies and crumbles. Well I found some Rhubarb in my backyard that was ready to be used so I got together the ingredients I had in my kitchen and threw together this delicious crisp. It’s a bit on the sweet side which is perfect for me, but if you like pies on the “less sweet” side then add more rhubarb and a tad less sugar.
Here it goes!
You will need:
1 cup rhubarb (chopped)
3 cups mixed berries (I used frozen)
1 1/2 or 2 cups strawberries (I used frozen)
2 cups white sugar
3 tbsps cornstarch
1 tsp ground cinnamon
1 pinch ground nutmeg
1/4 cup orange juice (optional)
Topping:
2 1/2 cups oats
1 1/2 cup brown sugar (packed)
1/2 cup all-purpose flour
1/4 cup butter
1/2 tsp ground cinnamon
1 | Preheat oven to 400 degrees F (175 degrees C). |
2 | In a large bowl, mix together rhubarb, mixed berries and strawberries. In a separate bowl, combine the sugar, cornstarch, cinnamon and nutmeg, mix and then add to fruit. |
3 | Pour fruit mixture into a 9×13 inch glass baking dish. |
4 | For the topping: In a large bowl, mix the oatmeal, flour, brown sugar and 1/2 teaspoon cinnamon together. Add the butter in little pats and cut into the flour mixture until it looks crumbly, (no big chunks). Sprinkle over the fruit. |
5 | Bake at 400 degrees F (175 degrees C) for 30 to 35 minutes, or until topping is brown and the juices are bubbling. |
