I found this recipe recently and tried it out for myself. It was so delicious and I wanted to share with everyone. So here you go!!
What you’ll need:
2-3lb whole chicken (preferably organic)
Fresh thyme, rosemary and sage
salt and pepper to taste
olive oil
3-4 garlic cloves
(I added potatoes and carrots to roast with the chicken, this is optional.)
To get started you will need to pull the sprigs off of the thyme and rosemary stems and the leaves off other sage stems. The easiest way to do this is to slide your fingers along the stem the opposite way the sprigs grow. Use about a handful of each herb.
Once this is complete, chop and dice all the herbs and toss them in a small bowl. Next. mince the garlic cloves and throw them in with the herbs. Also add a teaspoon or so of salt and a pinch of pepper and mix into the herbs.
P.S. I got my pretty pink knife for 5.00 at Marshall’s and it works amazing. So sharp.
Now add 5-6 tablespoons of olive oil or until it is a runny herb “rub” for your chicken.
The next step is definitely not my favorite! Rinse your chicken and lay it on a dish, cut the spine of the chicken out and push down on the chicken so it lays flat. This will help the chicken to cook thoroughly much quicker!
Next you will need to separate the skin from the chicken by sliding your hands in between and then take some of that yummy herb rub and rub it in there between the skin and the body. Save some for the outside as well! Rub it along the outside of the skin too, to get that crispy glaze.
Once that step is over it should look a little something like this:
While you are doing all of these steps be sure your oven is preheating at a very high temp. of 400 degrees!
Now plop this baby in the oven covered with foil.
It will need to cook for a good hour and a half depending on the size of the chicken, could be less could be more.
Be sure to baste the chicken with the juices in the pan every 30 min. or so. This is what will give it that crispy skin. Remove the foil after 45 min. of cook time.
