It’s that time of year! Perfect for delicious pies and crumbles. Well I found some Rhubarb in my backyard that was ready to be used so I got together the ingredients I had in my kitchen and threw together this delicious crisp. It’s a bit on the sweet side which is perfect for me, but if you like pies on the “less sweet” side then add more rhubarb and a tad less sugar.
Here it goes!
You will need:
|1||Preheat oven to 400 degrees F (175 degrees C).|
|2||In a large bowl, mix together rhubarb, mixed berries and strawberries. In a separate bowl, combine the sugar, cornstarch, cinnamon and nutmeg, mix and then add to fruit.|
|3||Pour fruit mixture into a 9×13 inch glass baking dish.|
|4||For the topping: In a large bowl, mix the oatmeal, flour, brown sugar and 1/2 teaspoon cinnamon together. Add the butter in little pats and cut into the flour mixture until it looks crumbly, (no big chunks). Sprinkle over the fruit.|
|5||Bake at 400 degrees F (175 degrees C) for 30 to 35 minutes, or until topping is brown and the juices are bubbling.|
